How to Make Christmas Tree Pinwheels

1. Prep & mix the filling
Finely dice the red pepper. Ensure your cream cheese is very soft so it spreads easily.
Combine softened cream cheese and ranch seasoning in a bowl until smooth.

2. Assemble the wraps
Divide the cream cheese mixture between the 3 spinach wraps and gently spread, leaving a small border.
Sprinkle the shredded cheddar and diced red peppers evenly over each wrap.
Then starting from one side, roll each tortilla firmly until sealed, then wrap tightly in plastic wrap.

3. Chill the wraps
Refrigerate for at least 1 hour or until ready to slice.
4. Slice the tortilla rolls
Remove the plastic wrap from the rolls.
Trim the ends of each roll, then slice each wrap into six one inch pieces using a sharp knife or bread knife.

5. Make the trees
Lay two of the slices flat and pinch the top and bottom corners to create a triangle shape.
Add a tooth pick to hold the “tree” together. These tooth picks with a star on top, are fun for the pinwheel trees.

Storage Tips: Refrigerate leftovers in an airtight container for up to two days. Do not freeze, as the cream cheese and tortillas will lose their texture. Assemble with toothpicks just before serving for the best presentation.

Tips & Variations
- Ditch the toothpicks: Arrange the rolls in a triangle shape on a cutting board, or serving platter to look like a tree. Then top with a piece of star fruit.
- Double or triple this recipe for large parties: This recipe will yield 18 single roll trees, or 9 double roll trees.
- Single Tree version: Use only one piece of the roll, and top the tooth pick with a piece of cheese cut out like a star.
- Add spinach strips or cucumber for extra crunch.
- Swap cheddar for pepper jack cheese if you like a tiny holiday “kick.”
- Use sun-dried tomatoes instead of peppers for a deeper flavor and festive color contrast.
- Gluten-free tortillas work too, just roll gently to prevent cracking.
- Make it dairy free: Use a plant-based cream cheese and vegan cheddar shreds, or swap the cheese for hummous. One of our favourite vegetarian combos is with hummous, spinach, cucumber, and sun-dried tomatoes (the soft, in oil kind).

Can you freeze these rolls before you slice them?
I don’t recomend freezing the pinwheels first, as the texture will not be good, once they’ve thawed.
