Delicious Fall Soup Recipes
Soup is one of the most versatile dishes to whip up during the cooler months. And while they can take a bit of time, there are a few things I do to speed up the process if I have a busy week:
- Use premade stock: While not as tasty as homemade stock it is super handy when short on time
- Make a hug batch of stock and freeze: When I have time, I make a large batch of stock in my slow cooker and then freeze extra to use later. I love this slow cooker – such a time saver as I can dump and go.
- Use canned beans: I rarely cook my own beans these days, so canned beans are a life saver. Or make a big batch in the instant pot or pressure cooker and freeze what you don’t need. This works better for heartier beans like chickpeas or kidney beans. Don’t overcook.
- Make a batch of soup on Sunday for the week: I will typically make a large batch of soup on Sunday to have throughout the week. So I don’t have to cook for those extra busy nights.
- Make extra soup and freeze: Freeze in individual or serving size reusable containers. I love using these 32 Ounce (1 litre) mason jars for family size soup portions.
1. Coconut Chickpea Sweet Potato Soup
Coconut chickpea sweet potato soup is a fragrant, protein-rich soup that combines all my favorite soup things in one pot.
With chunks of sweet potatoes, chickpeas, and bell peppers in a rich coconut base, it’s satisfying enough to be your main dish, or try it out for a light lunch or breakfast.
A drizzle of fish sauce adds an extra special touch, while the subtle sweetness of the sweet potatoes brings a delightful pop of flavor without any added sugar.
You can leave out the fish sauce if you prefer, or want a vegan / vegetarian soup, but I do find it adds an extra yummy umami / salty flavor.
