- 16 oz colby jack cheese, shredded
- 8 large flour tortillas
For toppings (optional but recommended):
- Green onions (chopped)
- Sour cream

How to Make Sheet Pan Tex Mex Beef Quesadillas

1. Preheat the oven & prep veggies

Preheat your oven to 375°F. Chop the onion and bell peppers.
2. Brown and season the beef


Cook the ground beef in a large skillet until it’s no longer pink, breaking it apart as you cook it. Drain any grease.
Stir in the taco seasoning until the beef is evenly coated.
COOK’S NOTE: I’ll often saute the yellow onions first until soft, then add the ground beef until cooked. Then mix the spices in the ground beef before adding the peppers and sauting them for a couple more minutes to soften, but not fully cook. I mix the black beans in at the end. This usually cuts down the oven time needed to only 20 ish minutes.
3. Add the veggies and beans


Mix in the onion, peppers, black beans, and green chilies. Stir until combined.
4. Build the tortilla base

Arrange tortillas around the edges of a large sheet pan. Each tortilla will be half on the pan, half off, and slightly overlapping.
For a large sheet pan, put two tortillas along each long side, then one at the top of the pan, and one at the bottom. Then place one tortilla in the center.
5. Add cheese + filling


Sprinkle half the cheese over the tortilla sections inside the pan.
Then spread the beef, bean and veggie mixture evenly over top to the edges of the sheet pan.
6. Fold and press



Sprinkle the remaining cheese evenly over top of the layer of beef and bean mixture.
Now add the last tortilla to the center of the mixture on the pan. Then fold the other tortilla edges toward the center.
7. Bake until crispy

Place a second sheet pan on top to weigh the tortillas down. Transfer the pans to the oven to bake for 20 minutes.
Remove the top pan and bake for another 10 to 15 minutes until golden.
8. Slice and serve


Remove from the oven. Let cool slightly, then cut into 8 squares (or 12 for smaller pieces). Serve with sour cream, salsa, green onions or your favorite toppings.
