TIPS: I highly recommend you boil more eggs than you think you need, as some of them always end looking funny once peeled. Or just don’t worry about the imperfect ones. Also you can double or triple the recipe to make a larger batch.
For the Deviled Egg Filling
- ¼ cup mayonnaise
- 1 teaspoon mustard
- 1 teaspoon white vinegar
- Salt and pepper, to taste
- 1–2 drops orange food coloring, optional
TIP: If you want a stronger orange pumpkin color, add one or two drops of orange food colouring to the yolk mixture. Start with one drop and mix well before adding more.
For the Pumpkin Decorations
- 1 – 2 tsp smoked paprika, for sprinkling
- Fresh chives for the pumpkin stems

How to Make Pumpkin Deviled Eggs

1. Prepare the Eggs
Peel the 6 boiled eggs and slice each one in half lengthwise.
NOTE: It’s best to boil the eggs in advance so they have time to completely cool.
To boil your eggs:
- Bring a pot of water to a boil
- Lower the eggs into the boiling water (straight from the fridge is fine)
- Lower the heat to a low simmer, and cook for 10 to 11 minutes
- Once boiled, put them in ice water immediately for at least 15 minutes
- Refrigerate the eggs until you need them, preferably overnight.
- Peel your eggs under cool running water
2. Remove the yolks and mash
Gently scoop the yolks from the centres and place them in a medium mixing bowl. Arrange the empty egg white halves on a serving platter or plate.
Use a fork to mash the egg yolks until no large pieces remain.

3. Make the filling
Add 1/4 cup of mayonnaise, 1 tsp of mustard, 1 tsp of white vinegar, salt and pepper to the mashed egg yolks. Stir until the mixture is smooth and creamy.
