Ingredients

  • ½ cup butter (one stick), at room temperature
  • 1 cup creamy peanut butter
  • ½ cup powdered sugar
  • 1 cup graham cracker crumbs
  • ¼ cup powdered sugar (for rolling)

Instructions

1. Combine Peanut Butter and Butter

In a medium-sized mixing bowl, use a spatula to fold together the room-temperature butter and peanut butter until the mixture is smooth and well blended.

2. Add Dry Ingredients

Gradually fold in the graham cracker crumbs and powdered sugar. Mix until the ingredients are fully incorporated and the mixture forms a thick paste.

3. Chill the Mixture

Cover the bowl with plastic wrap and refrigerate the mixture for at least 1 hour. This helps the mixture firm up, making it easier to roll into balls.

4. Shape & Coat The Snowballs

Using a tablespoon-sized cookie scoop (or a spoon), portion out the chilled peanut butter mixture. Roll each scoop between your palms to form smooth, even balls. Roll each ball in the additional ¼ cup of powdered sugar until fully coated.

For a festive touch, you can place the finished snowballs in mini cupcake liners. Change out the colors or patterns of the cupcake liners for different holidays or occasions.

5. Store and Serve

Store the peanut butter snowballs in an airtight container in the refrigerator for up to a week.

Serve chilled or at room temperature for a melt-in-your-mouth treat.

Notes

  • Use Room-Temperature Butter: Softened butter blends more easily with the peanut butter, creating a smooth base for your snowballs.
  • Using Natural Peanut Butter: Make sure your peanut butter is well stirred. You may also need to add a little bit more of the graham cracker crumbs. I tend to add 1 tablespoon at a time if the peanut mixture is too runny.
  • Chill for Easier Rolling: Don’t skip the chilling step—it ensures the mixture is firm enough to shape without sticking to your hands.
  • Switch Up the Coating: For variety, roll the snowballs in shredded coconut, crushed graham crackers, cocoa powder, cinnamon sugar, or sprinkles instead of powdered sugar.
